BioMarinated Classic Bruschetta

As part of our Great (Bio)Cheese Swap, we’ve whipped up a classic bruschetta. Combining fresh tomatoes, olive oil, basil, garlic and herbs – this appetizer is sure to be a crowd-pleaser.
SWAP: Traditional feta for our flavourful BioMarinated, to make this meal completely plant-based.

Ingredients
  

  • 1 large baguette, sliced
  • olive oil, to brush
  • 2 cloves garlic, halved

Mixture

  • 4 tbsp oil
  • 2 cloves garlic, thinly sliced
  • 4 large tomatoes, diced
  • 1/4 cup cup basil, thinly sliced
  • 2 tbsp balsamic vinegar
  • 1 tsp kosher salt
  • 1 jar  BioMarinated, crumbled

Instructions
 

  • Heat a medium pan over medium-low heat. Add oil and garlic – cook, until lightly golden.
  • Toss together tomatoes, basil, vinegar and salt in a large bowl. Add garlic and oil from pan, tossing to combine. Allow to marinate for 10 mins.
  • Preheat oven to 180 degrees C. Brush bread lightly with oil, on both sides. Place on a large baking sheet, and toast bread for 10-15 mins. Allow bread to cool for 5 mins and top with halved garlic.
  • Spoon tomato mixture on top of the bread. Crumble a generous amount of BioMarinated on top.
