Mushroom Enchiladas

Mushroom Enchiladas

  • 240 g Pulled Oats®
  • 100 g broccolini (or asparagus)
  • 1 onion
  • 1 box of fresh mushrooms
  • 1 jar salsa sauce
  • 1.3 cups grated cheese
  • 1 tsp smoked chili powder or smoked paprika
  • A bunch of cilantro
  • Oil
  • 1 packet full-grain wheat tortillas


  1. Preheat the oven to 200°C (392°F).
  2. Add the broccolini to boiling water and remove it promptly so that they don’t over-cook.
  3. Chop the onion and cilantro and cook in oil until soft.
  4. Chop the mushrooms, cut the Pulled Oats® into smaller pieces and fry them together in oil on medium heat.
  5. Add in chopped broccolini, chili powder, most of the salsa sauce and half of the cheese.
  6. Stir to combine.
  7. Fill the tortillas with the mixture. Roll up each tortilla and lay them in an oven dish, seam side down. Pour over the remaining salsa sauce and top with grated cheese.
  8. Bake for about 10 minutes, or until the cheese is melted.
