This pasta salad is great as a meal or a side dish and a perfect dish to bring to a potluck or gathering! When eaten by itself as a meal, you can add tofu for an extra protein kick.
Serves: (roughly) 8
Ingredients
- 1 16oz box of bowtie pasta
- 1 block of Daiya smoked gouda
- 1 3oz package or 1 container of sundried tomatoes
- 5 cups of spinach
Sauce:
- ½ cup of vegan mayo
- ¼ cup of water
- 1 tablespoon apple cider vinegar
- ½ teaspoon salt
- ½ teaspoon pepper
Directions

Boil a large pot of water and cook bowtie pasta to box instructions. Once cooked, rinse in cool water and let sit in the fridge.

While the pasta is cooking, saute the spinach until slightly wilted. Take off heat.

Roughly chop the sundried tomatoes and cube the gouda.

Combine all the sauce ingredients and whisk together with a fork until completely combined and smooth.

Combine all ingredients and sauce in a large bowl and mix. Store in the fridge, and serve cool with a sprinkle of dill on top if you’d like!
