Vegan Brownies

Ingredients

  • 2 flax eggs (4 tbsp flax meal + 1/2 cup water)
  • 1 cup applesauce
  • 1 cup maple syrup
  • 1 cup flour
  • 1 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/2 tbsp vanilla extract
  • AS MANY chocolate chips your heart desires


Directions

  1. Prepare your flax eggs by mixing the water and ground flaxseeds. Set aside for ~10 minutes.
  2. Set oven to 350 degrees F (180°) and line a pan with parchment paper.
  3. Mix your eggs and applesauce together. Add in your vanilla extract and maple syrup.
  4. Slowly add in your flour, followed by the cocoa powder. Add salt and baking powder and stir. until well combined WITHOUT over mixing.
  5. Fold in some of your choc chips.
  6. Pour batter into the pan and use a spatula if needed.
  7. Sprinkle the remaining chocolate on your brownie.
  8. Bake for ~30 minutes BUT keep a good eye on them as it might be quicker!
