4-Ingredient White Rum Balls

It’s almost Christmas, so there is no better time than now to share this super EASY & SIMPLE rum ball recipe!  Rum balls traditionally contain condensed milk so my vegan version uses coconut condensed milk – which is just as delicious, if not even better than dairy condensed milk! I made these as a naughty sweet snack for a Christmas potluck at work and I hope you make these to share with your mates too.

Ingredients
  

  • 250 g plain biscuits (I used vegan, GF scotch fingers from Woolworths )
  • 1.5 cups desiccated coconut
  • 2 tbsp rum
  • 1/2 cup coconut condensed milk
  • desiccated coconut for rolling

Instructions
 

  • In a food processor, add in the biscuits & coconut and blitz until fine crumbs
  • Add in the rum and condensed milk and blitz until the mixture clumps together like cookie dough
  • Divide the mixture into 20 even portions and roll into balls. Roll the balls in desiccated coconut to coat
  • Store the balls in the fridge until ready to serve

Notes

  • If the mixture appears too soft, place it in the fridge for a while until it firms up more before rolling
