It’s almost Christmas, so there is no better time than now to share this super EASY & SIMPLE rum ball recipe! Rum balls traditionally contain condensed milk so my vegan version uses coconut condensed milk – which is just as delicious, if not even better than dairy condensed milk! I made these as a naughty sweet snack for a Christmas potluck at work and I hope you make these to share with your mates too.Vegan and Gluten Free
250gplain biscuits (I used vegan, GF scotch fingers from Woolworths )
1.5cupsdesiccated coconut
2tbsprum
1/2cupcoconut condensed milk
desiccated coconut for rolling
Instructions
In a food processor, add in the biscuits & coconut and blitz until fine crumbs
Add in the rum and condensed milk and blitz until the mixture clumps together like cookie dough
Divide the mixture into 20 even portions and roll into balls. Roll the balls in desiccated coconut to coat
Store the balls in the fridge until ready to serve
Notes
If the mixture appears too soft, place it in the fridge for a while until it firms up more before rolling
