Beetroot Hummus

This is one of my favourite dips!  It’s full of flavour and makes for a delicious snack paired with some crunchy veggie sticks!

Ingredients
  

  • 1 beetroot
  • 1 can chickpeas
  • ½ lemon
  • ¼ cup hulled tahini
  • ½ tsp cumin powder
  • 1 pinch salt

Instructions
 

  • Chop the beetroot into small chunks and add to a food processor with the rest of the ingredients.
  • Blitz until creamy but a little bit chunky. I like to add some of the reserved water from the chickpeas to thin it down until it reaches a nice consistency.
  • Top with some extra virgin olive oil and desired toppings before serving.
  • Enjoy!
