Chocolate Mint Slice
This slice recipe is high in protein, gluten-free and vegan. The base is crumbly and wholesome, while the middle mint layer is fudgy and sweet and it is topped off with a decadent chocolate layer.

For the base
- 3 cups of oats
- 3 tbsp flax meal
- 2 scoops of chocolate protein (optional)
- ⅔ cup cocoa
- ⅓ cup maple syrup
- ½ cup coconut oil
For the middle
- 8 Medjool dates (soaked)
- 1 can of chickpeas
- 1 cup soaked cashews
- ⅓ cup coconut oil
- ⅓ cup maple syrup
- 3 tsp peppermint extract
- 1 tbsp matcha powder (optional)
For the top
- 1 block of vegan mint chocolate
- ½ cup chocolate chips
- 1 tbsp coconut oil
For the base: Use a food processor to blitz up the oats into a flour. Add the rest of the base ingredients and blitz. Pour the base mix into a dish lined with baking paper and press it down so it covers the bottom. Place in the freezer while you make the middle.
For the middle: Blitz the ingredients for the middle until well combined. Pour onto the base and press down. Place in the freezer while you make the top.
For the top: Boil some water in a saucepan over the stove. In a bowl break up the chocolate and add the choc chips and coconut oil. Place the bowl over the boiling water to melt the chocolate. Make sure your bowl is big enough to fit over the top of the saucepan. Stir until melted. Pour the melted chocolate over the top of your slice. Refrigerate until you want to eat it.
