Peanut Butter Noodles

The star of the show is our mouthwatering sauce, a creamy blend of peanut butter (or tahini), soy sauce, maple syrup, lime juice, and a hint of chili sauce for that perfect balance of sweet and spicy. You can adjust the heat to your liking, making it as mild or fiery as you prefer. Pro tip: using sweet chili sauce adds a touch of sweetness without overwhelming heat.

Putting it all together is as easy as can be. After cooking the spaghetti to al dente perfection, rinse it under cold water to remove excess starch. Finely chop your chosen veggies, toss them with the sauce and spaghetti, and voilà – you have a mouthwatering dish ready to serve.

Ingredients
  

Sauce

  • ½ cup of peanut butter or tahini
  • 4 tbsp soy sauce
  • 4 tbsp maple syrup
  • Juice of a lime
  • 3 tbsp chilli sauce adjust to your liking
  • Noodles
  • 500 g spaghetti
  • Veggies of your choice. I love carrots sugar snap peas and red capsicum

Instructions
 

  • So simple! Just mix either by hand or in a blender to make it super smooth.
  • Cook the spaghetti as per packet directions and rinse thoroughly under cold water when cooked to rinse off the starch from the spaghetti.
  • While the spaghetti is cooking finely chop up your veggies and when it’s all finished combine veggies, sauce and spaghetti in a big bowl and you’re done.
  • I always sprinkle with some sesame seeds or more chopped peanuts if I’m taking it somewhere to make it that little extra but it’s just as good without.
