This is one of my favourite dips! It’s full of flavour and makes for a delicious snack paired with some crunchy veggie sticks!
Beetroot Hummus Recipe
- 1 beetroot
- 1 can chickpeas
- 1/2 lemon
- 1/4 cup hulled tahini
- 1/2 teaspoon cumin powder
- 1 pinch salt
- Chop the beetroot into small chunks and add to a food processor with the rest of the ingredients.
- Blitz until creamy but a little bit chunky. I like to add some of the reserved water from the chickpeas to thin it down until it reaches a nice consistency.
- Top with some extra virgin olive oil and desired toppings before serving.
