Summer Gazpacho

Summer Gazpacho


Delicious soup made with vegetables that pack a particularly big nutritional punch and is ridiculously easy to make! Traditionally you would add some bread soaked in water but I like it as much without!

Summer Gazpacho

  • 1 1/2 kg tomatoes
  • 1/2 white onion
  • 1 small cucumber
  • 1 small green pepper
  • 1/4 extra virgin olive oil
  • 1 teaspoon sherry vinegar
  • 1 pinch salt
  • 1 pinch black pepper


  1. Add everything to a blender and blend until smooth. I like to leave it in the fridge for a few hours to chill and let the flavours develop.
  2. Add toppings of your choice. I added grilled corn, basil, chopped cherry tomatoes, extra virgin olive oil and a pinch of cashew parmesan.
