Tofu Dan Dan Noodles
Enjoy a delightful bowl of Tofu Dan Dan Noodles, ready in just 20 minutes. Silken tofu is stir-fried with garlic and ginger, then tossed in AYAM™ Sweet Soy Sauce for a rich, umami flavour. Served over thin Hokkien noodles and blanched choy sum, this dish is finished with a creamy sesame sauce and garnished with crispy fried shallots. Each bite offers a perfect harmony of spice and richness.
Ingredients
- 1 tsp vegetable oil
- 1 x 2cm ginger julienned
- 3 cloves garlic finely chopped
- 300 g silken tofu drained and dried with paper towel and cut into thirds
- 1 tbsp AYAM™ Sweet Soy Sauce
- 450 g thin Hokkien noodles
- 1 bunch choy sum blanched
- Crispy fried shallots to garnish
- Sesame sauce
- 2 tbsp tahini
- 2 tbsp AYAM™ Sambal Oelek chilli paste
- 1 tbsp AYAM™ Light Soy Sauce
- ½ tsp AYAM™ Sesame Oil
- Sichuan peppercorns crushed
Instructions
- Cook noodles as per packet instructions and blanch the choy sum.
- For the sesame sauce combine all the ingredients with 80ml warm water.
- Heat oil in a fry pan over high heat. Add the garlic and ginger and toss and then add the tofu and fry for 1 minute. Then stir through sweet soy sauce and toss to break up tofu so it resembles mince.
- To assemble, spoon sesame sauce into each shallow bowl then arrange noodles and choy sum on top. Top with tofu and garnish with crispy shallots.
