Vegan Chefs Table launches at The Emerald Room in Sydney
When we learned that Chef Elijah Attard was introducing a 6-course vegan degustation, our curiosity was immediately piqued! Set to launch next week, this promises to be an incredible experience featuring high-quality food, drinks, and exceptional service, all crafted with 100% vegan ingredients.

What is it?
A 5 seat, 6 course vegan degustation with an arrival chefs cocktail occurring within the Emerald Room restaurant serving as its own unique experience.
Focusing on hyper seasonal ingredients, highlighting both foraged and native ingredients in a refreshing and relaxed atmosphere. You’ll be looked after by the chefs from beginning to end.
Enjoy the degustation during the live cabaret and burlesque show from Wednesday to
Saturday. Sit between 6pm and 9pm.

From Davidson Plum Umeboshi to Kakadu Plum Kosho, you’ll see how the dots are curated through a degustation showcasing the best produce Australian growers and farmers have to offer. And that’s just when you arrive at the Chefs Table within Sydney’s newest cabaret venue -The Emerald Room.
Be treated to a seamlessly flowing 6 course vegan degustation menu in between show stopping cabaret and burlesque performers.

Chef Elijah hasn’t just thought about the produce, he’s also considered the canvas – the carefully crafted ceramics from the talented minds of Claire Ellis (Claire Ellis Ceramics), Leia Sherblom (Grit Ceramics) and Milly Dent (Milly Dent Ceramics). The Chefs Table is an experience that aims to both delight you and ease you into a world of discovery with every bite.

A little about Chef Elijah Attard
Elijah began his career at a local cafe in Sydney’s South Coast called 5th Ave, before jumping over to the one hatted fine diner Caveau where he learnt his skills of foraging for wild ingredients.
Around 2018, Elijah moved to the much loved vegan restaurant Yellow, in Potts Point. Cooking at the 2 hatted restaurant got Elijah working closer with farmers, appreciating a deeper understanding of flavours, presentation and high standards in order to create an unforgettable experience for the guests.
By 2022 Elijah finished up at Yellow as the sous chef. After leaving Yellow, Elijah traveled between Sydney and Melbourne to host many sold out plant based food pop ups and takeovers at bars and restaurants for 6 months eventually finding a residency for his passion project called Roots Dining.
Roots Dining (2022/2023) is the 6 seater 8 course degustation experience highlighting wild foraged plants and native ingredients, all while connecting local ceramicists and artists to create the best of what Australian fine dining has to offer.
He even worked with local bars (Par, in Melbourne) to create a matching Alcoholic and Non Alcoholic cocktail pairing designed specifically for these events. In 2024 Elijah joined on with Chef Nina Huynh as co-head chefs for the exciting new 150 seater cabaret and restaurant the Emerald Room, in Darlinghurst Sydney.
