
Vegan Thai Peanut Curry
This Vegan Thai Peanut Curry recipe is so simple to make and bursting with flavour. Perfect for a cozy night in or a dinner party with friends, this dish is easy and sure to impress.
Ingredients
- 4 portions of rice, cooked
Marinated Tofu
- 600 g tofu, chopped into bite-sized cubes
- 3 tbsp soy sauce
- 1 tsp maple syrup
- 1 tsp sesame oil
Veg
- 1 carrot, sliced
- 1 broccoli, cut into florets
- 1 can baby corn, drained
Thai Peanut Curry
- 4 cloves garlic, crushed
- 1 onion, diced
- 1 chilli, chopped
- 1 inch inch ginger, grated
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp ground coriander
- ½ tsp paprika
- 500 ml veg stock
- 3 tbsp peanut butter
- 1 tsp coconut sugar (sub brown sugar)
- 1 tbsp soy sauce
- 1-2 tbsp vegan fish sauce (optional)
- 400 ml coconut milk
- salt to taste
Instructions
- First marinate your tofu by placing marinade ingredients in a container, adding the tofu and shaking until the tofu is coated. Set aside.
- Add onion, garlic, chilli and ginger to a large fry pan and fry until soft. Add spices and fry for a minute or two. Add stock, peanut butter, sugar, soy sauce, vegan fish sauce (if using) and coconut milk and simmer for 15 minutes. Season with salt.
- Meanwhile, cook rice and fry veggies and tofu in a separate pan until golden.
- Serve curry, rice and veggies together topped with sesame seeds and coriander.

What initially sparked your plant based journey?
My plant based journey was sparked while I was working in a vegetarian restaurant in France and I got into a conversation about dairy with the woman who owned it (who was vegan). She showed me a 5 minute video on the dairy industry and that send me on a train of research into Veganism and it was just obvious to me it was the right thing to do.

In my city, Nolita which is a vegan pizzeria. In the world, Land & Monkeys bakery in Paris 😍

A vegan alternative you recommend everyone must try?
Tofu!! I know a lot of people say they don't like it but I truly believe there's ways of cooking tofu that everyone can like.

Deliciously Ella is my favourite person to go to for meals so any of her cookbooks! They are always super simple but so tasty!
