Layered Cacao Chia Pudding
I love plain chia pudding as a healthy weekday option but wanted to add a little bit of excitement, so I mixed up the textures here with the layers and toppings (moussey, gelatinous, crisp, slimy combo) and added the chocolate flavour to add some decadence.

Layer 1. Chia Pudding
- ¾ cup plant-based milk (I prefer soy)
- ¼ cup chia seeds
- 1 tbsp maple syrup
- ½ tsp vanilla
Layer 2. Chocolate Chia Mousse
- 1 cup plant-based milk
- ¼ cup chia seeds
- 2 tbsp cacao powder
- 2 tbsp maple syrup
- 1 tsp vanilla
Layer 3. Yoghurt and Toppings
- 1 cup non-dairy yoghurt (coconut or soy)
- 1 banana
- cacao nibs
- maple syrup
Mix all Layer 1 ingredients into a bowl and chill, covered overnight in the fridge.
Combine all Layer 2 ingredients in a high-speed blender then chill in the fridge overnight, covered.
Serve in two glasses or jars, layering half the mixtures between each.
Top with yoghurt, sliced banana, cacao nibs and maple syrup to taste.
