Layered Cacao Chia Pudding

I love plain chia pudding as a healthy weekday option but wanted to add a little bit of excitement, so I mixed up the textures here with the layers and toppings (moussey, gelatinous, crisp, slimy combo) and added the chocolate flavour to add some decadence.

Ingredients
  

Layer 1. Chia Pudding

  • ¾ cup plant-based milk (I prefer soy)
  • ¼ cup  chia seeds
  • 1 tbsp maple syrup
  • ½ tsp vanilla

Layer 2. Chocolate Chia Mousse

  • 1 cup plant-based milk
  • ¼ cup chia seeds
  • 2 tbsp cacao powder
  • 2 tbsp maple syrup
  • 1 tsp vanilla

Layer 3. Yoghurt and Toppings

  • 1 cup non-dairy yoghurt (coconut or soy)
  • 1 banana
  • cacao nibs
  • maple syrup

Instructions
 

  • Mix all Layer 1 ingredients into a bowl and chill, covered overnight in the fridge.
  • Combine all Layer 2 ingredients in a high-speed blender then chill in the fridge overnight, covered.
  • Serve in two glasses or jars, layering half the mixtures between each.
  • Top with yoghurt, sliced banana, cacao nibs and maple syrup to taste.
