Pumpkin Scones

Ingredients
  

  • 3 cups almond flour
  • 2 medium-large very ripe bananas mashed
  • 1 cup pumpkin purée
  • cup creamy almond butter
  • 1 tbsp vanilla extract
  • 1 tsp baking powder
  • ¼ cup extra virgin olive oil
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp ginger
  • Topping: Pumpkin seeds

Instructions
 

  • In a bowl, mash the ripe bananas and mix in the remaining wet ingredients.
  • Fold in the dry ingredients and mix until smooth.
  • Use an ice cream scooper to evenly distribute cookies onto a baking sheet lined with parchment paper. Then slightly flatten them
  • Sprinkle pumpkin seeds on top of the scones.
  • Bake at 375℉ for approximately 25 minutes depending on your oven
  • Let the sones cool completely
  • Enjoy!
