Pumpkin Scones

- 3 cups almond flour
- 2 medium-large very ripe bananas mashed
- 1 cup pumpkin purée
- ⅓ cup creamy almond butter
- 1 tbsp vanilla extract
- 1 tsp baking powder
- ¼ cup extra virgin olive oil
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 1 tsp ginger
- Topping: Pumpkin seeds
In a bowl, mash the ripe bananas and mix in the remaining wet ingredients.
Fold in the dry ingredients and mix until smooth.
Use an ice cream scooper to evenly distribute cookies onto a baking sheet lined with parchment paper. Then slightly flatten them
Sprinkle pumpkin seeds on top of the scones.
Bake at 375℉ for approximately 25 minutes depending on your oven
Let the sones cool completely
