Spaghetti with Tomato & Garlic

This recipe combines the classic combination of tomatoes and garlic to create a dish that bursts with natural flavours. With the addition of creamy vegan cream, vegan cheese, and a generous handful of arugula, this spaghetti tomato and garlic recipe takes comfort food to a whole new level.

Ingredients
  

  • 1 onion
  • 2 cloves of garlic
  • 1 box of tomatoes 20 pieces
  • 1 big handful of arugula
  • 200 ml (small tub) vegan cream
  • 50 ml pasta water
  • 400 g vegan shredded cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • Spaghetti for 2 people

Instructions
 

  • Add chopped onion and garlic to a pan.
  • Fry it off in a good amount of olive oil.
  • Add the tomatoes and mash them, also add the arugula and stir.
  • Keep adding the rest of the ingredients and spices + cooked spaghetti.
  • Blend everything together and serve in two bowls. I added some extra salt on the top.
