Caramel chews with almond crunch

These caramel chews will satisfy your sweet, crunchy and chocolate cravings, with just a hint of salt, and all of it is made with only “do you good” ingredients.

Servings 12 chews

Ingredients
  

  • 12 Medjool dates

filling

  • 3 tbsp almonds chopped and toasted lightly in a pan
  • 2 tbsp peanut butter
  • 1 good pinch of flake salt
  • 1 tbsp maple syrup

chocolate cover

  • 50 g cocoa mass
  • 25 g cocoa butter
  • 30 g of maple syrup or another liquid sweetener
  • 3 drops vanilla oil or ½ teaspoon vanilla powder⁣

Instructions
 

  • Mix all the ingredients well in a bowl. Make an incision in the dates and remove the stone. Put about 1 teaspoon of the filling in the dates and squeeze the date part together. Put the dates in the fridge or freezer while you make the chocolate coating.

  • You can melt 100 grams of ready-made vegan chocolate, gently over a warm water bath, or do as I do and make your own chocolate:
  • Melt the cocoa mass and cocoa butter gently over a water bath and mix in sweetener and vanilla powder
  • Whisk everything well together
  • Take the stuffed dates out of the freezer and dip one piece at a time in the melted chocolate, before placing them on a tray with baking paper and sprinkling them with flake salt
  • Put them in the fridge so that the chocolate hardens completely. Store in an airtight box in the refrigerator.
