
Layered Cacao Chia Pudding
I love plain chia pudding as a healthy weekday option but wanted to add a little bit of excitement, so I mixed up the textures here with the layers and toppings (moussey, gelatinous, crisp, slimy combo) and added the chocolate flavour to add some decadence.
Ingredients
Layer 1. Chia Pudding
- ¾ cup plant-based milk (I prefer soy)
- ¼ cup chia seeds
- 1 tbsp maple syrup
- ½ tsp vanilla
Layer 2. Chocolate Chia Mousse
- 1 cup plant-based milk
- ¼ cup chia seeds
- 2 tbsp cacao powder
- 2 tbsp maple syrup
- 1 tsp vanilla
Layer 3. Yoghurt and Toppings
- 1 cup non-dairy yoghurt (coconut or soy)
- 1 banana
- cacao nibs
- maple syrup
Instructions
- Mix all Layer 1 ingredients into a bowl and chill, covered overnight in the fridge.
- Combine all Layer 2 ingredients in a high-speed blender then chill in the fridge overnight, covered.
- Serve in two glasses or jars, layering half the mixtures between each.
- Top with yoghurt, sliced banana, cacao nibs and maple syrup to taste.
