We know how much everyone has been missing this Greek staple, and today, we’re channelling our Greek energy with these easy pita pockets! Our BioTzatziki is the perfect dairy-free, creamy and zingy addition to any savoury meal.

Ingredients
  

  • 1 tub BioTzatziki
  • 2 pieces of pita /wraps

Potatoes

  • 2 medium potatoes
  • olive oil
  • 1/3 cup lemon juice
  • 1 tbsp dried oregano
  • salt, to taste

Salad

  • 2 cucumbers, sliced
  • 6 cherry tomatoes halved
  • 1/2 purple onion, sliced
  • olive oil
  • salt & pepper, to taste

Instructions
 

  • Preheat oven to 200 Degrees C. Peel potatoes and cut them into wedges. Place wedges into mixing bowl with all other ingredients and toss until well combined.
  • Spread wedges onto a baking tray and cook in oven for 15 minutes. Once golden, turn the potatoes and bake for a further 10 minutes. Allow to rest.
  • Pan-fry your pita breads/wraps over low-medium heat for 2 minutes. Allow to cool.
  • Place all salad ingredients into a mixing bowl and toss to combine.
  • Generously spread BioTzatziki over pita breads/wraps (the creamier, the better!), add potato wedges and salad.
