Vegan pancake recipes.

Today is national pancake day and as such, we thought we would look back on some of our best pancake recipes and highlight the ones we think you need to be recreating today! With easy swaps from conventional pancakes, vegan pancakes can be enjoyed by vegans and non-vegans alike!

Let’s take a look at how to whip up some amazing vegan pancakes!

 

 

1. Chunky Monkey Pancakes

 

  • Servings: 3-4

Ingredients

  • 1 ripe banana mashed
  • 1 cup soy/almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 4 tbsp pure peanut butter
  • 1/4 cup crushed walnuts
  • 1/4 cup dark chocolate chips
  • 1 tbsp baking powder
  • pinch of salt
  • 1/4 cup brown sugar or maple or any plant syrup
  • 2 cups flour

 

Directions

 

  1. Whisk the soy milk and apple cider vinegar. Let it rest for 5 minutes while you mash the ripe banana.
  2. After 5 minutes, add the mashed banana to the milk and apple cider vinegar mixture.
  3. Add the vanilla extract, peanut butter, walnuts and chocolate chips.
  4. Then add the rest of the ingredients and mix just to incorporate. Do not overmix.
  5. Heat a non-stick pan (spread a little bit of ‘Nutelex’ if you’re not using a non-stick pan).
  6. Cook the pancakes in medium to low heat about 2-3 minutes each side or until the sides are golden brown.
  7. Serve with more bananas, crushed walnuts, and choc chips.
  8. Finish with some maple syrup and enjoy

2. Oat Pancakes (gluten-free option)

 

Oat Pancakes

  • Servings: 4
  • Difficulty: Easy

Ingredients

 

  • Oats 50g
  • Plant-based milk 1 cup
  • Banana 1
  • Coconut sugar 2 tablespoon
  • Flour of choice 1 cup (gf option)
  • Baking powder 1 teaspoon
  • Salt 1/2 teaspoon
  • Apple cider vinegar 1 tablespoon
  • Desired topping

Directions

  1. In a medium bowl, add the flour, sugar, baking powder, and salt, and stir to combine.
  2.  In a medium bowl, add almond milk, apple cider vinegar, and vanilla, and stir to combine
  3. Pour the liquid mixture into the dry mixture and whisk until smooth.
  4. Pour about ½ cup of batter onto a nonstick pan over medium heat.
  5. When the top begins to bubble, flip the pancake and cook until golden.
  6. Serve warm and add desired toppings.

3. Chocolate Pancakes

 

Chocolate Pancakes

  • Servings: 2 servings
  • Difficulty: Medium

Chocolate pancakes with coconut yoghurt
Ingredients
  • 3/4cup flour
  • 2 Tbsp sugar
  • 1 1/2 Tbsp baking powder
  • 2 tsp cacao powder
  • 1 cup of plant milk
  • 2 Tbsp of coconut oil

Optional: chocolate chips or cut up dark chocolate, banana, melted dark chocolate and coconut yoghurt

Directions

  1. In a large bowl mix the dry ingredients together
  2. Add the plant milk and the melted coconut oil
  3. Mix in the cut-up chocolate
  4. Heat a large pan (medium to high heat) and grease it with some coconut oil
  5. Scoop 1-2 Tbsp from the pancake batter and cook it until the edge of the pancake turns golden-brown and then flip it
  6. Add some coconut yoghurt, melted chocolate and banana on top

4. Cherry Clafoutis Pancakes

Cherry Clafoutis Pancake with Cherry-Vanilla Custard and Spiced Cherry-Berry Compote

  • Servings: 10-12 Pancakes
  • Difficulty: Easy
  • Print

Many are surprised that this is actually an easy recipe and relatively quick to put together with staple ingredients. I used frozen fruits in this recipe.

Ingredients


Cherry-Vanilla Custard

  • 1/4 c pitted cherries (thawed if frozen)
  • 1 1/4 c soymilk
  • 2 tbsp caster sugar
  • 2 tsp vanilla extract
  • touch of vegan red food color (optional) ⁣⁣⁣
  • 1 tbsp cornstarch

Spiced Cherry-Berry Compote

  • 1 c mixed pitted cherries and raspberries
  • 1 tbsp water ⁣⁣⁣
  • 2 tbsp caster sugar ⁣⁣⁣
  • 1/4 tsp ground cinnamon ⁣⁣⁣
  • 1/8 tsp ground nutmeg

Pancake Mix

  • 1 1/4 c soy milk⁣⁣⁣
  • 1 tbsp Apple cider vinegar
  • 1 1/2 c plain flour⁣⁣⁣
  • 2 tsp baking powder⁣⁣⁣
  • 2 tbsp sugar
  • 1/4 tsp salt⁣⁣⁣
  • 1 tsp vanilla extract
  • 2 tbsp canola oil⁣⁣⁣
  • 1 c sliced cherries
  • vegan butter (for cooking)

Directions

 

Cherry-Vanilla Custard

  1. Place all ingredients in a blender and blend until cherries are well pulverized.
  2. Transfer mixture to a small saucepan and cook, without boiling and with frequent stirring, over medium-low heat until it thickens to a custard consistency. Set aside.

Spiced Cherry-Berry Compote

  1. 1. Pour all ingredients in a small saucepan and heat at a medium-low fire. ⁣
  2. Keep stirring and allow the fruits to release juices
  3. Frequently stir until the juice has reduced and the mixture is thick and jelly-like
  4. Remove from heat

Pancakes

  1. In a small bowl, whisk the soymilk and vinegar and set aside while you move on to the dry ingredients. This is your buttermilk.
  2. In another bowl, mix well the flour, baking powder, sugar, and salt.
  3. Pour in your buttermilk, vanilla, and oil and stir to get everything incorporated. Make sure not to overmix your batter.
  4. Heat a non-stick pan over medium-low heat then, if using, grease pan with butter.
  5. Pour about 2-3 tablespoons of batter on the pan and top it with a few of the sliced cherries. This will give the pancake the clafoutis look.
  6. Flip the pancake when you see bubbles on the surface and cook until golden.
  7. Repeat with the rest of the batter.
  8. To serve, layer the custard between pancakes and top the stack with the compote. Enjoy!

5.Cocoa Oat Pancakes

Cocoa Oat Pancakes

  • Servings: 1
  • Difficulty: Easy
  • Print

Ingredients

  • 3/4 cup oats
  • 1/2 banana (mashed)
  • 1/4 cup almond milk
  • Flax or chia egg (1tbs ground flax and 3tbs water)
  • 1/2 tsp baking powder
  • 1 tbsp cocoa powder (or cacao powder)

Directions

  1. Blend oats into a flour using a food processor or blender
  2. Combine all of the ingredients and mix/ blend well.
  3. Heat a non-stick pan and scoop 1/4 cups of the batter onto the pan.
  4. Cook until bubbles start forming in the top and the pancake seems firmer, then flip.
  5. Repeat with all of the pancakes until they are cooked.
  6. Top then with whatever you like, I used coconut yoghurt and berries.
  7. Enjoy!
