Spaghetti with Tomato & Garlic
This recipe combines the classic combination of tomatoes and garlic to create a dish that bursts with natural flavours. With the addition of creamy vegan cream, vegan cheese, and a generous handful of arugula, this spaghetti tomato and garlic recipe takes comfort food to a whole new level.
Ingredients
- 1 onion
- 2 cloves of garlic
- 1 box of tomatoes 20 pieces
- 1 big handful of arugula
- 200 ml (small tub) vegan cream
- 50 ml pasta water
- 400 g vegan shredded cheese
- 1 tsp salt
- 1 tsp black pepper
- Spaghetti for 2 people
Instructions
- Add chopped onion and garlic to a pan.
- Fry it off in a good amount of olive oil.
- Add the tomatoes and mash them, also add the arugula and stir.
- Keep adding the rest of the ingredients and spices + cooked spaghetti.
- Blend everything together and serve in two bowls. I added some extra salt on the top.
