What a NYC girl eats in a week of quarantine.
Whilst in quarantine, let’s be honest life becomes a lot more about food, what’s in the fridge, and well..food. So we wanted to take a look at someone who ate fairly healthy & vegan to get some tips, inspiration, and a recipe or two.
We found Meg Josephson a New York-based vegan who has just released a video showcasing a week of eating whilst in quarantine. Meg Josephson produces videos not only on her vegan diet but about mental health, spirituality, and all things in between.
Her approach to cooking was also one that resonated with the team (nothing too complicated!) which is easy and simple vegan recipes that are also delicious!
